WOK-FRIED IMITATION SHARK FINE
(VEGETARIAN)
Ingredients:
-100 g vegetarian shark fin soaked.
-150g bean sprouts
-3eggs
-23g celery shredded
-6g spring union diced
-3pieces dry scallop(soak and shredded)
-20g coriander (for dicorate)
Seasoning:
-1tsb chicken powder
-1tsp salt
-3tsb oil
-pinch of white pepper.
Method:
1.Simmer vegetable sharks fins in boiling water for 20secondxs, drain and set aside.
2.heat q wok with dash of oil and salt, Add bean sprouts and slow cook for a while, set aside
3.mix beaten egg with seasonings, Add vegetarian shark's fin,dry scallop.heat oil in a wok and Add egg mix to it. slow cook until medium well, use a chopstick to stir-fry a strong aroma. Add bean sprouts and celery shredded, fry for a while.
Springkle with spring onion, fry again and place on a plate.decorate with coriander, serve.

**-put the flour in the bowl Add a water
-mix well using your fingers to flatten and elongate shape, then cut into small pieces into balls then roll one at a time.

FRIED EGG WITH LONG BEANS
-3eggs
-5 rods long beans
-1 chicken thigh meat
- oil for frying
-pinch of salt and white pepper

**-Cut grilled chicken convenient pieces
Heat oil and stir-fry ground ingredients,Add lemon grass,onio flakes and coconut milk.
Add chicken pieces,Simmer on medium heat till dry.
**Discard lemon grass.serve hot with boiled white rice and other dishes.

RENDANG - LAMB SHIN

Ingredients:
-1,1/4 litres coconut milk
-1 tumeric,torn and kontted
-5 kaffir lime leaves
-1 stalk lemon grass ,bruised
-1-2 pieces tamarine(asam gelugur)
-10 red chillies,finely sliced
-1kg lamb shin
Spice (ground):
-3 tablespoon chopped galangal
-1/2 tablespoon chopped tumeric
-1/2 tablespoon chopped ginger
-200 grams red chillies
-4 shallots.salt
**Simmer coconut with tumeric leaf.kaffir lime leaves,lemon grass,asam gelugur,sliced chillies and ground spices until the milk thickens and becomes oily.Reduce heat...ADD a lamb and cook until tender.Stir occasionally until the spices dry and turn brown.

Ingredients:
-5or6 boiled eggs
-oil for deep frying
-5tablespoons oil
-2 kaffir lime leaves,torn
-1tablespoon lime juice
-1tomato,chopped
Spice(ground):
-10red chillies
-5shallots
-1teaspoon salt
Metode:
Score the surface of the eggs and deep-fry until golden brown.set aside.
heat 5 tablespoons oil and saute ground spices until soft,then add kaffir lime leaves,
lime juice and tomato.mix well,and add 1-2 tab;espoons water if necessary,continue to cook until the water is absorbed,toss in the eggs and mix well.

-1large fresh water fish or 2-4 smaller,cleaned and gutted
-1/2teaspoon salt,sprinkle off white pepper
-2lemon grass,bruised
-2cups water
-2tablespoons tamarind juice
Spice Paste:
-8shallots,peeled and chopped
-3cloves garlic,peeled and chopped
-1/5teaspoon salt
-6candlenuts
-2,5cm genger,peeled and sliced
-2,5cm turmeric,peeled and sliced
-2,5cm galangal.peeled and sliced
-15red chillis,seedes and sliced
Metode:
Season fish inside and outside with salt and pepper.prepare the spice paste by grinding or blending all ingredients finely.Put in a pan with the water and all other ingredients except fish.Bring to the boil,reduce heat and simmer uncovered for 10 minuts,Add a little more water if the stock evaporates too much.
Add fish and continue to simmer until cooked.turning fish over gently from time to time,Remove fish carefully from stock,arrang on platter and pour sauce over.

-1large fresh crab or 1kg
-3tablespoon Butter
-3shallots,sliced
-3cloves garlic, choped
-2tablespoon soya beans,mashed
-2tablespoon dried prawns,roasted&ground
-3talbespoon black pepper,roun coarsely
-1/2 Curry leave
-7red baby chillis
-3tablespoon black soy sauce
-2tablespoon sugar
-2tablespoon oyster sauce
Metode:
Clean the crab and cut in half,smash the claws with a cleaver to allow the seasonings in. drain and set aside**Heat a wok melt butter and put shallots,garlic,salted soya beans,rdied prawns,black pepper,curry leaves and chillies.
saute until fragrant then add crab and the remaining ingredients.cook for 7-10 minuts.
